Egg Allergy

Symptoms of an egg allergy can differ from person to person. Some people are mildly allergic and may get a rash or hives. Others, who are very allergic, may experience life-threatening anaphylaxis which can block the person's airways and breathing passages and requires immediate medical attention. When a person is allergic to eggs, their immune system perceives the proteins in the egg as foreign substances. The immune system will create specific antibodies (called immunoglobulin# - IgE) to the egg proteins and will release these antibodies each time something made with eggs enters the digestive system. These antibodies trigger the release of natural chemicals into the body. One of these chemicals is called histamine, which causes an inflammatory response. These histamines can affect the gastrointestinal tract, causing stomach ache, diarrhea and gas; the skin, causing rashes and hives; or the respiratory system causing wheezing and difficulty breathing. Egg whites contain about 40 different proteins. Allergic reactions occur more often to egg whites than to egg yolks.
