Dairy Allergy / Intolerance
Milk is made up of water, protein (casein), carbohydrates (a milk sugar called lactose), minerals, fats and other substances. An allergy occurs when our bodies react to the proteins in cow’s milk, casein and whey, as if they were a foreign substance.
An intolerance may have the same symptoms as an allergy, but with an intolerance the symptoms generally show up over a period of time - hours to days.
Casein allergy is often apparent with babies, but can remain undiagnosed until adulthood.
Recent evidence indicates that up to 75% of the world’s population is Lactose Intolerant to some extent. That is, three quarters (¾) of all people have difficulty digesting lactose.
